Lock-down gave me a chance to focus on what's important. Things like: talking with friends and family, and binge-watching three seasons of Schitts Creek.

However, it also made me realise that I needed some hobbies to unwind with. Art used to be my hobby, but now it sits in a weird grey area as it's also my work. So, I picked up gardening and got a greenhouse.

But then... I rediscovered the joys of baking.

Let me tell you: There’s nothing quite like the thrill of baking perfectly fudgy chocolate brownies. And, if creating the perfect baked good wasn't enough… you then get to eat them. And that's when my real talents start to shine!

If there ever was an Olympics for eating, you know I'm walking away with gold for cake demolition.

Kneading bread helped me work through frustration (although I never did perfect sourdough), and cookie baking helped me realise that sometimes you just have to roll with it.

Baking also taught me the importance of the unassuming ingredient. Chocolate and butter and cream and eggs are delicious in their own right, but blend in humble flour? Suddenly EVERYTHING is elevated, just through sheer flour power.

At the end of the day, though, I love baking not because it’s a skill to learn. Or, a (delicious) way to pass the time while avoiding responsibility.

But, more than anything, I love baking because it makes everyone happy.  And right now, the world needs happiness. If my humble baking skills can make my friends, or staff, or neighbours smile, what are you gonna do? Bakers gotta bake.

I cannot wait for these to launch. My covid cooking has been out of control. I cook when I am anxious as it gives me relief. The neighbors are will fed. I leave food in their letter boxes. We are all happy in the end.

Hands down, Bakers Gotta Bake is my fave. That’s exactly what I do when I feel particularly challenged and / or stressed. My family, friends, and coworkers enjoy the goodies!
